The “Knödel” (dumpling) is one of the most widely known and delicious Tyrolean specialties. Inside its round shape, it leaves plenty of room for variety. Whether it contains small pieces of bread and “Speck” (smoked bacon), or – more traditionally – spinach, cheese, liver, or even mushrooms and beets: there are many fillings waiting to be savored in Merano. As are the sweeter Knödel varieties.
